XIC (pronounced "cheek") is a still rosé wine made from 100% Trepat grapes grown organically in estate (Mediona) vineyards, in the mountains at an altitude of ~500 metres. The higher elevations allow for a slower development/maturation of the grapes, thus maintaining all the (fruity) aromatic potential of the variety.

Macerated in a press for approximately five hours to extract colour and all the organoleptical characteristics of the variety. Fermentation is in temperature-controlled, stainless-steel tanks - on its own yeasts - then aged for about three months at a cool temperature of 16 degrees Celsius.

Certified organic and vegan (eg plant origin fining).

Our Tasting Note: Bright, pale, pink/rose colour. Aromas and flavours of cherry and watermelon. Dry, with balanced acidity, good structure and a medium/long clean finish. 11.0% alc./vol.. ~3.0gr/L RS

Pairing suggestions: Perfect aperitif wine, and with a range of appetizers/tapas, Asian dishes, lighter-style vegetarian dishes as well as fruit desserts.
