White Txakoli (pronounced chak-oh-lee) is made from an indigenous Basque grape called Hondarribi-Zuri (pronounced on-dar-ee-bee zoo-ree). The grapes come from a single plot - Peruri (Leioa) - at an altitude of 46m absl, picked during the first week of the harvest. While the winery has bottled single plots before, as well as incorporating extended aging on the lees with some of their wines, this is the first time using a concrete egg as part of the aging process.

Fermentation took place in a small, temperature-controlled, stainless steel tank, to retain the fresh aromatics of the grape. The wine is then aged in a 17hl concrete egg - on the lees - for 15 months. While in the egg, there is a constant motion gently bringing the lees in contact with the juice.  Alc./vol. 13.5% .

Limited - only 2380 bottles produced - and 30 came into Ontario. Ships in a 3-bottle box.

Our Tasting Note: Bright, lemon yellow colour, with slight greenish hues. Complex aromas and flavours of warm citrus - grapefruit and orange - and nectarine with mineral notes of delicate white flowers, marzipan, and dry herbs.  Complex on the palate, medium-bodied, with bright acidity, and a dry, fresh, clean, bold, lingering finish.

Pairing: Match with grilled seafood, Sushi, white meats and poultry, as well as mature cheeses.
